  • 2 cups flour
  • 1 ½ cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 2 cups pumpkin
  • 4 eggs, well beaten
  • ¼ cup vegetable oil
  • 2 – 3oz. packages of Jell-O Coconut Cream Pie filling

Pumpkin Coconut Bread Recipe Directions

  1. Preheat oven to 375° F.
  2. In a large bowl, mix together all ingredients.
  3. Pour batter into two greased loaf pans.
  4. Bake in the oven for one hour.
  5. Use a toothpick to test for doneness.
  6. Remove from pan and allow to cool on a wire rack.
