Easy Pumpkin Cupcake Recipe

Pumpkin Cupcake Description

This is an easy pumpkin cupcake recipe. They are great for Halloween parties and other Fall get-togethers. Make them for Thanksgiving, too. For Halloween parties, you can decorate them with candy corn.

Yield: 24 cupcakes

Pumpkin Cupcake Ingredients

1/2 cup	Shortening
2	Eggs
1 1/2 cups	Sugar
2 1/2 tsp.	Baking Powder
1.2 tsp.	Baking Soda
1/2 tsp.	Salt
2 1/4 cups	All Purpose Flour
2tsp.	Cinnamon
1/2 tsp.	Nutmeg
1/2 tsp.	Ginger
1 cup	Pumpkin Puree
3/4 cups	Milk
1/2 cups	Walnuts
1 can	Vanilla Frosting
	Orange Food Coloring(1 drop red and 5 drops yellow)

How to Make Pumpkin Cupcake Directions

Preheat oven to 350° F.
In a large bowl, cream shortening and sugar.
Add in eggs.
Add in pumpkin puree and milk.
In a bowl, sift together flour, baking powder, baking soda, and spices.
Mix dry ingredients into the mixture until the batter is smooth.
Stir in chopped walnuts.
Put paper cups into cupcake tins.
Put batter into cupcake tins.
Bake for 25 minutes.
Use a toothpick to test for doneness.
Allow cupcakes to cool.
While cupcakes are cooling off, add orange food coloring to vanilla frosting, mixing well.
Frost cupcakes with orange frosting.
