Nic Welty concocted this pumpkin pie recipe when he was only 15! Nic spent a lot of time taste-testing all of the spices to get the right blend, and here at our farm, he is the one who cuts, cooks, and purees the pumpkins for recipes. His mom does the baking! Enjoy Nic’s Pumpkin pie recipe today.

Nic's Pumpkin Pie Ingredients

19″ pie crust 2 cups
2 cupssolid pack pumpkin
2large eggs
3/4 cupbrown sugar
1 1/3 cupsmilk
1/2 tsp.salt
1 tsp.nutmeg
1/4 tsp.cloves
1 /2 tsp.ginger
1/2 tsp.vanilla

How to Make Pumpkin Pie Directions

  1. Beat the eggs.
  2. Add sugar and spices. Then mix well.
  3. Add milk and pumpkin Then, beat until smooth.
  4. Pour the mixture into a prepared pie crust.
  5. Bake for 15 minutes at 425° F.
  6. While the pie is baking, make the topping.

Pie Topping Indgredients

1/4 cupbrown sugar
2 tbl.flour
2 tbl.cold butter
1/2 tsp.cinnamon
1/16 tsp.ginger
1/16 tsp.cloves
3/4 cupchopped walnuts

Directions How to make Pie Topping

  1. Stir flour and spices thoroughly, then cut in butter until fine balls form.
  2. Add nuts and mix.
  3. Remove pie from oven and sprinkle topping on hot pie.
  4. Return the pie to the oven, and reduce the temperature to 350° F. Then, bake for another 40-45 minutes, or until a knife inserted into the center comes out clean.
  5. Serve warm with ice cream, or cool and serve with whipped topping.
